Chicken Cacciatore

Tuck into this tasty tomato and chicken dish, an Italian favourite.

Ingredients
  • 2 tbsp olive oil
  • 1kg chicken thigh fillets
  • 1kg chicken drumsticks
  • 1 large onion, chopped
  • 2 cloves garlic, sliced very thin
  • 400g white mushrooms, sliced thin
  • 80g dry white wine or chicken stock
  • 500ml canned chopped tomatoes
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • 1 tbsp minced parsley
  • 2 carrots peeled and chopped
  • 120g pitted kalamata olives
  • 2 celery sticks, chopped

Method (Serves 4)

  1. In a large skillet over medium-high heat, brown the chicken, onion, and garlic in the olive oil.
  2. Combine the sautéed chicken, onion and garlic with all the remaining ingredients, except the parsley, in the slow cooker ceramic bowl.
  3. Place the lid on the bowl and cook for 3-4 hours on HIGH or 7-8 hours on LOW.
  4. Season with salt and black pepper to taste and stir in the parsley before serving.
