Coq Au Vin

A rustic French classic!

Ingredients
  • 4 chicken thigh fillets, skinned
  • 1 tbsp cooking oil
  • 50g flour
  • 100g bacon, chopped
  • 1 onion, chopped
  • 300ml chicken stock
  • 300ml red wine or chicken stock
  • 100g mushrooms, sliced
  • 1 bay leaf
  • 2 cloves
  • Salt and pepper to taste
  • 8 baby carrots peeled

Method (Serves 4)

  1. Preheat the slow cooker on HIGH for 20 minutes.
  2. Heat the oil in a pan. Coat the chicken in seasoned flour and fry on all sides until brown. Transfer to the slow cooker.
  3. Sauté the bacon and onion in the same pan and soften but don’t brown the bacon. Stir in the remaining flour and add the other ingredients.
  4. Bring to the boil, stirring continuously, and then pour over the chicken in the slow cooker. Cook on HIGH for 4 hours or LOW for 8 hours, or until cooked. Remove the bay leaf and cloves before serving.
  5. Serve with mashed potato.
